After getting back to my apartment today I bought some food.  Zine wanted me to buy food for when she comes over later, Kanom Jeen Nam Yaa (rice noodles with fish curry and vegetables) as usual. She eats this every time she comes to my apartment because she loves Kanom Jeen and there is an awesome stall on one of the streets in my neighborhood.  I bought 2 bags of Nam Yaa curry for her, one for myself, a bag of Keiow waan (green curry) for myself, four bags of rice noodles, and a bag of pickled mustard greens, chopped long green beans, chopped cabbage, and bean sprouts to mix in.  I also bought pad see ew (wide rice noodles in soy sauce with egg and a green leafy vegetable which I believe is bok choy or kale.  I stopped at 711 for some yogurt, orange juice, an energy drink, a sweet strawberry drink with jelly in it, and some Plax.  I also stopped at a stand to buy some iced coffee.  Thai iced coffee is instant coffee mixed with condensed milk and a lot of sugar.  It usually has very little coffee taste because there is so much milk and so much sugar, so I got it black this time.  Now I realize why they add so much milk and sugar.  They make the coffee using a whole bunch of poor quality instant coffee powder.  Not the best flavor, but now I know.  Altogether everything was about ten dollars including the motorcycle taxi ride to the 711.

Things I purchased/consumed after the Oishi restaurant. I didn’t actually buy the hot dog/cocaine shirt.  I did however buy some shrimp chips, spicy squid Lays, an energy drink, a Singha beer, more papaya salad, delicious grilled pig ear with sticky rice, three t shirts, an iced coffee, a Mexican coffee chocolate chip chocolate filled bun from Mr. Bun, some noodle seafood salad, and a waffle chicken sandwich from A & W.

I don’t know much at all about Mexican food, so I ended up unknowingly making juevos rancheros while trying to get rid of my salsa and guacamole for breakfast.  I’m pretty sure there are numerous ways to make juevos rancheros, but like I said, I wasn’t intending to make anything specific and did not know until I showed it to someone that that was in fact what I had made.
Fry two small corn tortillas in vegetable or corn oil until crispy. 
Spread re fried beans on top of one and then place the other on top, making a sandwich.
Fry two eggs sunny side up with a piece of pepper jack on top.
Place the eggs on top of your tortilla re fried bean sandwich.
Top with salsa and serve with guacamole, sour cream, and hot sauce.

Guacamole
Chop 2 avocados and as much cilantro as you like. Dice 1/2 of a red onion. Mince or smash 2 cloves of garlic and 1 jalapeno pepper.  Smash everything together in a medium sized bowl with the juice of 2 limes, and season with a decent amount of cumin, chipotle powder, cayenne, paprika, a little black pepper, and little curry powder.  Chop two more avocados and mix them into the bowl with everything else until the newly added avocados begin to blend in and the chunks are not as large.  Adding the two chopped avocados at the end allows you to make sure that the flavoring ends up throughout all of the guacamole while a decent level of chunkiness.
For the Salsa I used canned tomatoes which is something I normally don’t do for salsa, but this worked out great.  I took one 28 oz can and one 12 oz can of whole peeled tomatoes and strained the juice from them.  I placed the tomatoes in a blender with 2/3 of a red onion, 4 serrano peppers, 2 cloves of garlic, a 1/3 cup of olive oil, a half bunch of cilantro, the juice of 2 limes, and some salt and pepper.  I blended it until it was a reasonable texture and it turned out great.
To make the tortilla chips I just took corn tortillas and cut them into chip sized pieces and fried them in vegetable oil until they were golden and crispy, placed them on a paper towel to dry, and seasoned them with salt while they were still hot.
I didn’t make the sour cream or re fried beans, but I was starving and wanted more than just the chips, salsa, and guacamole.

This is from the superbowl so yeah it is pretty old.  First time ever making fried chicken.

Dredge in flour with lots of garlic powder, paprika, cayenne, salt, and whatever other spices you want.
Fry at around 375 turning the pieces over half way through if you have a shallow pan like I do.
I’ll put a recipe up for jalapeno poppers when I have a more successful method, but they were still pretty good.

Blend 1/2 cup molasses, 1/4 cup ketchup, 3 tablespoons dijion mustard, 1 small can chipotles in adobo, salt and pepper, and 1 jalapeno. This will make a little more of the sauce than is needed though.
Mix into 2  28 oz cans of cannellini beans in a baking dish. 
Cover with strips of thick uncooked bacon and a few sprigs of rosemary. 
Bake at 350 for about 25 minutes.

So I almost never buy vodka, but Luksusowa is an awesome buy.  20.99 for a handle.  Great tasting Polish potato vodka at a great price.  Try mixing it with mint leaves, lime juice, and ginger beer.

So right now my house has 14 kinds of hot sauce, a bag of habaneros and a bag of Thai peppers.

This is how you clean a frying pan after making wings in my kitchen. Don’t worry you do wash it afterwards though.  This eliminates the need to scrub it a lot.
